Barbecue Pulled Pork with Norfolk Dapple Cheese wins Great Norfolk Sandwich

City College Norwich student, Justin Gallant (16) from Blofield is the winner of the inaugural Great Norfolk Sandwich competition, run by the Maids Head Hotel and City College Norwich, to celebrate British Sandwich Week.

Judges Candi Robertson from Candi’s Chutney, representing Norfolk Food & Drink Festival, Luke Powell from the Eastern Daily Press and Maids Head Hotel General Manager Christine Malcolm and Head Chef Marcin ‘Magic’ Pomierny, unanimously voted Justin’s barbecue pulled pork, with Norfolk Dapple cheese, a truly Great Norfolk Sandwich.

Maids Head Hotel Operations Manager, Andrew Shorthose, presented Justin with his winner’s trophy. The toasted pulled pork sandwich will feature on the hotel’s lunch menu throughout June.

Other finalists were Ryan Gotts with Cromer Crab and mustard and lemon mayo, Jamie Harris-Shaw with honey and mustard chicken on sourdough, and Jacob Wiseman with roasted lamb shoulder and mint jelly. The students are all in their first year studying VRQ1 professional cookery and food & beverage service.

Justin Gallant said: “It’s the first time I have ever won anything. Pulled pork is my favourite at home and I thought it would work well in a toasted sandwich with Norfolk Dapple cheese. I really enjoyed preparing the sandwich in the Maids Head’s kitchen. It is the type of restaurant that I would like to work in.”

Florian Stoian, Debut Restaurant Supervisor at City College added: “We like to get our students involved in different challenges. It has been very good for them to come to a local business like the Maids Head and prepare their sandwiches in a competitive environment.”

Judge Candi Robertson said: “The sandwiches were all prepared to a very high standard. It was excellent to see regional produce being used and showcased. Congratulations to the winner, Justin Gallant.”

Andrew Shorthose Maids Head Hotel Operations manager said: “It has been great to give the City College students a realistic feel for what it is like to be out in the industry and to get experience in a historic building like ours. We will definitely repeat the competition next year and look forward to featuring Justin’s Great Norfolk Sandwich in our June menu.”
