Victoria Sponge
100 g (4 oz) Margarine
100 g (4 oz) Castor Sugar
100 g (4 oz) Self-Raising Flour
2 Eggs
* Preheat oven to 180 C, 350 F, Gas mark 4.* Cream together margarine and sugar until light and fluffy.* Beat in eggs one at a time with a little flour.* Place mixture into two greased 18 cm sandwich tins.* Bake for 20 – 25 minutes.* When cool, fill with jam and/or cream.* Lightly dust the top with icing sugar through a sieve.
